While living with Gem, we were going through a tough time with money and thus dinnertime required a creative flare, shall we say? This led to the creation of what I consider a modern classic of british fusion cooking! Pan fried chicken with boiled rice, a thick and creamy mushroom sauce (Gem always loved mushrooms) and......wait for it.....here comes the genius part.......crush up nachos!! trust me, it worked! When I asked her why and how? She merely replied - "well I didnt want them to go to waste and I thought it would be a change!"
